Context: Garum has been featured in several memes in this channel already. But in case you didn’t know, it’s a sauce made from fermented fish that Romans loved to put on all of their food.

Judging by what little I know about fish sauce (roman, thai or otherwise), the process seems more similar to east asian fish sauce. Fish isn’t even really the main aroma in Worcestershire sauce.

from what i’ve heard, it mostly just tastes of salt. apparently the romans weren’t big on spices and hadn’t figured out rock salt. soi can imagine why it’s was popular.

Have you tried east asian fish sauce? “mostly tastes of salt” might be for some low quality variants, but the decents ones are very flavorful. I mean c’mon, it’s fermented fish and the Romans had decidedly pre-modern technology, seems like you’d have to try pretty hard to make something that is not flavorful without an industrialized food factory.
