I like GOG because I wanted to have the games forever unlike with Steam where they COULD take it away. Sigh.
GOG sell you a license too. There’s also DRM-free games on Steam, it’s a publisher restriction.
Don’t all Steam games include Steam DRM? Which fair, is trivial to break, but it’s not DRM-free.
No, they do not. It’s something the developer/publisher of a game chooses to use.

I don’t like to defend corporations but this really could be a single human error. This is not a political party where its members are overlooking a college submitting to corruption but a room of people which could be as small as 1 while colleagues are getting coffee. All that said, I recommend piracy. They can’t take the game from you, it does not have a background process eating a bit of resources, and if you have a “morale high ground” you can adjust your support to whoever and how much you want.
